Rai (Mustard seed) prefers loamy or clayey loam soil. It is grown as a rabi crop in North India. Adyaway Rai is crunchy, spicy, and super aromatic, lends flavor to sauces and curries. Frying the seeds first makes the mustard taste more subtle and brings out a more complex flavor along with a creamy texture.
